  • 350 gms spinach leaves-cut into fine ribbons
  • 2 potatoes-peeled and cut into one inch pieces
  • 1 inch pieces ginger-grated into long shreds
  • 3 tbsp oil
  • 2 cloves-crushed
  • 2 pepper corns-crushed
  • 5-6 flakes garlic-chopped and crushed
  • 2 onions-properly chopped
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilly powder
  • 1/2 tsp spices
  • 1/4 tsp dry mango powder
  • 1/2 tsp salt or to taste
  • 1 tomato-cut into thin slices
  • Remove pulp a few green chilies


  • Remove thick stalks of spinach. Chop leaves finely into thin strips. Wash in 2-3 changes of water to remove all dirt.
  • Heat oil. Reduce flame then add crushed cloves and pepper corns.
  • Then add garlic and cook till it start to change color. Add onions and stir fry till golden.
  • Add turmeric powder, chilly powder, spices, dry mango powder and salt. Mix well on low flame for a minute.
  • Add potatoes. Stir fry for 4-5 minutes. Cook covered for 10 minutes, sprinkling a little water occasionally, till the potatoes turn soft.
  • Add spinach , shredded ginger. Continue cooking,without covering, for about 10 minutes, till the spinach gets done and is well blended with the potatoes.
  • Add tomato strips and green chilies. Mix well.
  • Then serve hot and enjoy the meal.


To include spinach leaves in your meal, you could make spinach pulao or spinach roti.
For roti, mix chopped spinach and a dash of ajwain along with salt to the dough, for rice, add shredded spinach after you add the water to rice.
For the raita, steam or microwave covered chopped spinach for a few seconds and add to well-beaten curd, seasoned with a little black salt and stir cumin seeds.
