Ingredients
  

For the chicken wings:

  • 2 pounds chicken wings separated into drumettes and flats
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper adjust to your spice preference
  • Salt and black pepper to taste
  • Vegetable oil for frying

For the coating:

  • 1/4 cup hot sauce e.g., Frank’s RedHot
  • 4 tablespoons unsalted butter melted
  • 1 teaspoon honey optional, for sweetness

Instructions
 

  • In a large bowl, mix the buttermilk, a pinch of salt, and a pinch of black pepper. Add the chicken wings and make sure they’re fully coated. Cover the bowl and refrigerate for at least 1 hour, but preferably longer (up to 24 hours) to marinate.
  • In a separate bowl, combine the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  • Preheat your deep fryer or a large, heavy pot with about 2 inches of vegetable oil to 350°F (175°C).
  • Remove the chicken wings from the buttermilk, allowing any excess to drip off.
  • Dredge each wing through the seasoned flour mixture, ensuring an even coating. Shake off any excess flour.
  • Carefully place the wings in the hot oil, a few at a time, without crowding the pot. Fry for about 10-12 minutes, or until they are golden brown and the internal temperature reaches 165°F (74°C).
  • While the wings are frying, in a separate bowl, combine the hot sauce, melted butter, and honey (if using). Mix well to create the buffalo sauce.
  • When the wings are done frying, remove them with a slotted spoon and drain on a wire rack or paper towels to remove excess oil.
  • While the wings are still hot, toss them in the buffalo sauce to coat evenly.
  • Serve your Southern fried chicken wings with celery sticks, carrot sticks, and your favorite dipping sauce, such as ranch or blue cheese dressing.
