Quick and Easy Fried Rice Recipe

  • 2 cups cooked rice preferably cold and day-old
  • 2 tablespoons vegetable oil
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 1/2 cup diced bell peppers any color
  • 1/2 cup diced onions
  • 2 cloves garlic minced
  • 2 eggs beaten
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Optional: cooked chicken shrimp, or tofu for protein
  • Optional garnish: chopped green onions and sesame seeds


  • Prep Ingredients: Dice veggies and have cooked, cold rice ready.
  • Heat Pan: Heat 1 tbsp oil in a pan.
  • Sauté Veggies: Cook carrots, bell peppers, and onions for 3-5 mins.
  • Add Garlic and Peas: Add garlic and peas, cook 1-2 mins.
  • Scramble Eggs: Push veggies aside, scramble eggs in the pan.
  • Combine Everything: Mix eggs with veggies, add rice.
  • Season: Drizzle soy sauce, add salt and pepper.
