Perfect Classic Cheesecake Recipe

Ingredients
  

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted

For the Filling:

  • 4 packages 8 ounces each cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2/3 cup sour cream
  • 2/3 cup heavy cream

Instructions
 

Preheat the Oven:

  • Preheat your oven to 325°F (160°C).

Prepare the Crust:

  • In a bowl, combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter.
  • Press the mixture firmly into the bottom of a 9-inch (23 cm) springform pan to create the crust.
  • Place the pan in the refrigerator while you prepare the filling.

Make the Filling:

  • In a large mixing bowl, beat the softened cream cheese until smooth.

Add Sugar and Vanilla:

  • Gradually add 1 1/4 cups of sugar and the vanilla extract to the cream cheese, and continue to beat until well combined.

Add Eggs:

  • Add the eggs one at a time, beating well after each addition.

Incorporate Sour Cream and Heavy Cream:

  • Stir in the sour cream and heavy cream until the mixture is smooth and creamy.

Pour into Crust:

  • Pour the cream cheese mixture over the prepared crust in the springform pan.

Bake:

  • Place the cheesecake in the preheated oven and bake for about 45 minutes to 1 hour, or until the edges are set, and the center still has a slight jiggle.

Cool and Refrigerate:
