Egg bhurji dhaba style or anda bhurji is a recipe of scrambled eggs from the Indian subcontinent. It has been compared to the Parsi dish akuri. The difference is in how it is prepared, and the addition of sautéed chopped onions, chili, and seasonings.

So lets learn how to make egg bhurji/anda bhurji at home in easy steps.

  • 2 tbsp vegetable oil
  • ½ tsp cumin seeds
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, finely chopped
  • salt
  • 2 green chilis, finely chopped
  • 1 tbsp hot sauce or ketchup (optional)
  • 1 tsp red chili powder
  • 4 large eggs, lightly beaten
  • 2 tbsp milk
  • ½ tsp ground turmeric
  • ¼ tsp black pepper
  • 2 tsp butter, divided
  • ¼ cup finely chopped fresh cilantro leaves


  • Heat the oil in a large skillet over medium-high heat. Add cumin seeds (jeera) and cook it for few seconds, or until the cumin seeds are aromatic and roasted.
  • Add finely chopped onion and cook it for 3-4 minutes, or until the onion is tender. After onions are cooked, add tomatoes and cook it for 3 to 4 minutes, or until the tomatoes are mushy,
  • Cook, stirring constantly, now add the chopped chilis and spicy sauce. Now Stir in the red chili powder and turmeric powder and cook for another one minute, or until the oil separates from the paste and dry spices are well roasted. You can also add garam masala in this step.
  • Meanwhile, whisk together the eggs, milk, salt, and black pepper in a medium mixing bowl. Add the whisked eggs to the skillet and gently stir for 1 minute, or until the mixture curdles.
  • Turn the heat up to high and stir the egg mixture fast, breaking it up into larger clumps. As you stir, add 1 teaspoon of the butter and let it to melt into the eggs.
    Along with it, stir in cilantro to mix it with the eggs. Cook for 5 minutes, or until the eggs are cooked to your preference.
  • Serve the eggs right away, garnished with the remaining cilantro and 1 teaspoon butter.
  • You punjbai dhaba style egg bhurji is ready.


Stir eggs properly in pan and break it into small lumps while eggs are still soft.
Cook turmeric properly so that it's aroma and taste disappears.
Serve egg bhurji with chapati or paratha.
