  • Prepare oil for deep frying in a deep pan. OR, if you are health conscious, preheat the oven to 350°F. Line a medium baking sheet with parchment paper.
  • Combine the ground chicken thigh, grated onion, breadcrumbs, crushed garlic, chili, ginger, cumin, curry powder (garam masala), red chili powder, salt, cilantro, egg, and black pepper in a large mixing bowl. • Prepare the gravy while the meatballs are baking. In a big saucepan, heat the oil over medium-high heat. Add the crushed garlic and chopped onion in pan. Cook for 4 minutes, or until the onion is transparent, over low heat.
  • Now add crushed tomatoes, hot sauce (optional), cumin, red chili powder, turmeric, salt, and pepper and bring it to a boil.
  • After it comes to boil Reduce the heat to low and let the gravy to simmer for 15 minutes. When the gravy has thickened and darkened in color and oil separates, taste it and adjust the spices to suit. Mix in the cilantro into the gravy.
  • Add the prepared meatballs to the gravy. Cook for 5 to 6 minutes, covered. Remove the meatballs from heat and top with additional cilantro. Serve with simple steamed rice.

Make the meatball mixture the night before and bake the meatballs when you're ready to save the time.
